新竹米粉,不只是米粉,從製作方法來區分”炊粉”與”水粉”,”炊粉”就是壓出細粉絲以後,再用蒸籠蒸熟,蒸的閩。南語叫”炊”,故名”炊粉”,而”水粉”通常比較粗,壓出成型後就放入開水中煮;閩南語教”灑”,煮熟後還要放在冷水泡一下,以免沾黏,因為從水中撈起來溼答答,所以叫”水粉”。

大燕麥粉絲三吃(本產品料理法)
1)炒大燕麥粉絲之步驟:

請把大燕麥粉絲用(溫)冷水浸泡約5~10分鐘後撈起,放於器皿中。(誤用開水浸泡)

用調味品、佐料作成濃湯。(濃湯要適量不能多) 例如:香菇、肉絲、蝦仁、高麗菜一同炒後,加入約500CC清水熬成濃湯.

把 (i) 中的大燕麥粉絲放入濃湯鍋內、用筷子攪拌炒,即成又香又Q的炒芋仔炊粉。
2)湯大燕麥粉絲之步驟:

請用調味品、佐料作成大鍋濃湯,待湯煮開後。

把本產品大燕麥粉絲稍加沖洗,放入鍋內。

約1~2分鐘,將火熄掉,即成好吃之湯大燕麥粉絲。
3)乾大燕麥粉絲之步驟:

將水燒開後,請把本產品大燕麥粉絲放入。

約1~2分鐘,迅速撈起置於碗內。

加入沙茶醬、肉醬或調味品,即成香Q之乾大燕麥粉絲。
